Crab 101

Nothing beats the sweet, tender meat of a fresh crab—but picking the right one at the seafood market can be the difference between a delicious feast and a disappointing dinner. Here’s a quick guide to help you choose the best crabs like a pro:

1. Look for Liveliness

If you’re buying live crabs, they should be active and responsive. A sluggish or limp crab may be near death, and the meat could already be deteriorating. Gently tap the shell. If it doesn’t move, pass.

 

2. Check the Shell

A healthy crab will have a clean, hard shell. For meatier crabs, go for the ones with darker, more worn shells. These "old shell" crabs have had time to fill out with meat, compared to freshly molted crabs with soft shells and less meat.

 

3. Feel the Weight

Pick up the crab—it should feel heavy for its size. A light crab is likely to be empty or have watery meat, while a heavier crab is packed with firm, sweet flesh.

 

4. Inspect the Smell

Fresh crabs should have a clean, slightly sweet ocean scent. If you detect any strong fishy or ammonia-like odors, the crab is likely past its prime.

 

5. Male vs. Female

Keeping female crabs after catch is illegal for most states and most crab species, this is to protect the crab population long-term. WT only keeps male (jimmy) crabs, and along with our partners inspect each catch carefully to ensure any female (jenny/sook) crabs are returned to the ocean. But for the curious, you can tell them apart by the shape of the apron on the underside. Males have a narrow T-shaped apron while females have a broader dome-shaped apron.


Bonus Tip: Time It Right

Go early in the morning for the best selection—and chat with your fishmonger. They often know when the freshest batch comes in and can help you pick the cream of the catch.
